Use What You've Got - Day 3

On Day 2, we didn't eat dinner in (see below post) but our lunches did consist of things we already had at home. Last night was dinner in, and when I opened the fridge there were definitely things that had to be used before they went bad. So I quickly whipped together a tasty little pasta dish that consisted of:

- 2 leftover homemade chicken fingers, cut up into little pieces
- 1/2 cup frozen chopped broccoli
- Some leftover roasted red pepper sauce
- Ronzoni Smart Taste rotini
- Dash of cheese

On the side I made more little toasts out of a quartered hot dog roll, sprayed with olive oil spray and dashed with Brady Street seasoning. Divided up the pasta into the 2 dishes, spread the cheese on top, and threw the bowls and bread under the broiler for about 3 minutes to toast the bread and melt the cheese. The result was a quick, tasty dinner that emptied out a bit more of our fridge.



Today we won't be attacking our stash as much because it's leftover Chinese food for lunch and then dinner from the Hannaford salad bar before youth group. However, as I was looking for stuff to make last night, it occurred to me that I can probably continue this next week while Steve is away - at least to some extent.
